
Noma – Nordic Cuisine
“In 2005, I was asked to design a cookbook for a restaurant – named Noma – that had recently opened its doors in Copenhagen and was beginning to carve out its niche in the culinary world. The goal was to create a book that showcased Noma’s recipes and captured the restaurant’s philosophy and approach to Nordic cuisine.”

“In designing the book, I aimed to reflect a visual style that stayed true to Noma’s ethos while evoking the essence of Nordic aesthetics. Collaborating with photographer Ditte Isager, we sought to do more than simply present recipes; we aimed to encapsulate the spirit of the restaurant and to evoke the stunning Nordic landscapes that provided the very ingredients used in Noma’s kitchen.”














At the time of publication, Noma had just earned its first Michelin star and was on the verge of global acclaim. Five years later, it would be awarded the Best Restaurant in the World for the first of its five times. Released in both Danish and English, the cookbook quickly became a sought-after collector’s item, with the English edition, Noma – Nordic Cuisine, now fetching thousands of dollars on eBay.
